An elegant natural wine made from the gaglioppo grape. Crafted using spontaneous fermentation, without filtration or added sulphites, but none of the failings typical of poorly made natural wines.
Tasting Notes:
Intense ruby red with light orange reflections. Notes of spices with plums and cherries, full bodied with a perfect balance of tannin and acidity.
Pair with lean meats, tomato sauces and fresh or semi-aged cheeses.
Serve at 12-16°C.

Vinification:
Soft pressing and long temperature-controlled fermentation (26°C) with skin contact. Bottling without inoculation of selected yeasts, filtration and added sulphites. Refined for 6 months in steel and 2 months in the bottle.
