The first sweet red wine produced from Negroamaro and black Malvasia in the Salento, hence the name meaning “rarity” in Latin.
Tasting Notes:
Dark ruby red in colour and an intense nose of ripe fruit. Opulent with hints of cloves and cinnamon, black mulberry jam, walnut husk, supported in the mouth by a pleasant and delicate tannin well integrated in the softness with a long bouquet.
Pairs well with almond paste, bitter chocolate and aged cheeses.

Vinification:
Indirect exposure to the sun on racks for 35 days, long temperature controlled maceration, light pressing using hydraulic cage press.
