Classic Cannonau made from 45 year old vines expressing the logevity and character of this native variety.
Tasting Notes:
Fine and elegant olfactory profile of red fruits and jam, rose petals and sweet spices. This tannins are soft and this wine has a long enveloping finish.
Serve at 16-18°C.

Vinification:
The best grapes are carefully selected from the oldest vineyards on the farm, destemmed and transferred to steel tanks for fermentation lasting 25-30 days with daily manual punching down. After fermentation the wine ages in large wooden barrels and ‘batonnage’ is performed weekly to stir the lees encouraging spontaneous malolactic fermentation. The wine is left to mature for 8 months in steel, 12 to 18 months in large barrels and a final 6 months in bottle.
