A varietal Cannonau made from 35 year old vines growing on the slopes of an extinct volcano that expresses the tradition of the area of Filieri, a historic cru of Dorgali, Sardinia.
Tasting Notes:
Notes of violet and fragrant cherry perfectly in harmony with the balsamic and mineral reflections. Elegant and powerful, with a sapid finish that exalts the fine aromatic components.
Serve at 16-18°C.
Vineyard Characteristics:
Soil: Volcanic rock (extinct volcano)
Altitude: 450 metres above sea level
Harvest: By hand in small crates at the end of September
Vinification:
Extreme care is taken to cultivate the small vineyards and the grapes are harvested manually. After careful selection and gentle destemming, the ferment in steel with daily punching down for approximately 20 days until fermentation completes. The wine is aged for approximately 12 months in concrete vats followed by further ageing in the bottle.
