A selection of the best bunches of rare white pecorello (75%) and greco bianco (25%) grapes are bended to together to make this extremely unique wine. The 12 months aging in oak barrels and steel tanks adds to the complexity.
Tasting Notes:
Bright golden in colour. On the nose floral, ripe and dried yellow fruit notes open up to a strong and complex taste of creamy, nutty and salty notes from the nearby Ionian sea.
Pair with shellfish-based dishes, raw and grilled fish, oven baked and stewed fish, fine white meat, tartare and carpaccio.
Serve at 8-12°C.

Vinification:
After a soft pressing and temperature-controlled fermentation in oak barrels the wine is then aged for 12 months in oak barrels and steel tanks, finished by refining for 2 months in bottle.
