From the winery’s Augustale line and sister wine to the barrique finished Nero di Troia Reserva, this is a premium rosato made from only the best bunches of native Bombino Nero grapes from the limestone hills of the Alta Murgia east of Ruvo di Puglia. Carefully cultivated and harvested, this wine has precious qualities: bright pink color, a rich aroma of fruity scents and a pleasantly fresh mineral flavor. The wine is an excellent pairing for seafood dishes such as stuffed mussels or seafood risotto, as well as with lighter dishes such as Bari focaccia, pumpkin flower pie, tomato paste and green beans with cacioricotta, and dried vegetable soups.
TASTING NOTES
The cherry, intense and luminous, fades to lively ruby nuances. Wild strawberries and pomegranate gives the wine a seductive touch of freshness to the red fruit flavour and delicate mineral notes close the tasting. Structure and depth give a wide and very thick wine.
Wine Making:
After selective harvesting in mid-October the grapes are brought immediately to the cellar for destemming. They are then cooled to 10° to undergo a short maceration in the press for 4/6 hours in order to extract the aromas of the skins. The must is then collected for fermentation in steel at 15°, then aged for 60 days on the lees before being bottled for a further 2 months before it is ready for drinking.
