The careful cultivation and selection of Fiano grapes from Contrada Le Matine in the countryside of Ruvo di Puglia produces a wine with bright reflections which brings to the nose a floral and fruity bouquet, enriched with almond notes. The taste is fresh and slightly mineral and pairs particularly well with sauté and fried seafood, such as cuttlefish ink risotto, fried red mullet and stuffed squid, as well as vegetable and pasta dishes like orecchiette with turnip greens.
TASTING NOTES
Bright and crystalline straw yellow colour. The olfactory impact is intense and complex. Linden, apple, mediterranean aromatic herbs and toasted hazelnuts are recognizable. The fresh and savory taste is balanced by juicy alcoholic nectar. The long fruity notes end on the finish.
Wine Making:
The grapes are harvested in the first half of September and brought immediately to the cellar for destemming. They are then cooled to 10° to undergo a short maceration in the press for 4/6 hours in order to extract the aromas of the skins. The must is collected for fermentation in steel at 15° and then the wine is aged for 60 days on the lees before being bottled where it remains in refinement for a further 2 months.
