Tasting Notes:
Ruby red. Intense ripe red cherries, morello cherries, plums and blackberries and spicy hints of dark chocolate. On palate mineral, soft with enveloping tannins.
Vineyard Characteristics:
Altitude : 650/700 masl
Soil : sandy loam with volcanic ash.
Training system : Etna sapling and spurred cordon counter-espalier.
Harvest : manual, around mid-October, based on seasonal trends.
Vinification:
Fermentation and maceration at controlled temperatures in steel vats. Matured for at least 12 months in 700 and 500 litre French oak tonneaux; then in steel tanks and in bottles for another 12 months.
