Tasting Notes:
Straw yellow with green tinges. On the nose yellow flowers such as mimosa and broom; daisy, saffron; snuffbox peach and apricot. The palate is creamy with sulphurous hints, good acidity and marked minerality.
Vineyard Characteristics:
Soil: Sandy loam with volcanic ash.
Training system: Etna sapling and guyot-style counter-espalier
Harvest: Manual, around mid-September weather dependent
Vinification:
Fermentation in steel vats at controlled temperatures. Matures for at least 5 months on the lees followed by a further 6 to 18 months in the bottle.
