This wine is a traditional method sparkling wine made in the natural way leaving the wine in the bottle in contact with the spent yeast, i.e. on the lees (“Sur Lie”). The yeasts of the second fermentation give an extraordinary complexity, to the nose and in the mouth, flanked by the elegant freshness and minerality. A softer, approachable style of sparkling wine made from Negroamaro.
Tasting Notes:
Pronounced lemon juice and citrus peel balanced by peach, mandarin, toasted almond and biscuity notes. Mineral, fresh and complex. Pairs well with seafood and fruit desserts.

Fermentation of the must obtained from a soft pressing of the whole, non-stemmed grapes. Cold decantation for 5 months. Refermentation in the bottle and aging “Sur Lie” (on yeast lees) until opening.
